Meat-Free Favorites : Mini Crab Cakes

Crab cakes are a staple dish for anyone like me who grew up in Baltimore eating Maryland blue crabs. Now that I’m vegan I don’t eat any crab, fish, or shellfish. Fortunately, there is a vegetarian crab product available that allows me to make simple crab cakes whenever my family has a seafood craving. MATCH Crab (MatchMeats.com) looks, feels, and tastes just like crab meat – but without any animal products! Here’s my vegan recipe for traditional Maryland crab cakes. I like to bake them in mini-muffin tins so they’re bite-sized for parties, but you can also make larger cakes – just bake them a few minutes longer.

Meat-Free Mini Crab Cakes

Makes 15 – 20 mini cakes

16 oz. pkg. MATCH Crab
¼ cup bread crumbs
3 Tbsp. egg-free mayonnaise
2 Tbsp. brown mustard
3 Tbsp. Old Bay Seasoning
¼ cup fresh parsley, chopped
Salt and pepper to taste

Combine all ingredients in a large bowl and stir until well mixed. Lightly spoon into mini-muffin tins coated with cooking spray or oil, leaving the tops rounded.

Bake at 350° F for 15 – 20 minutes until browned. Remove from oven and let cool 10 mins. Gently remove from muffin tins and serve hot.
