Tilapia (Asian fish)
1 large onion
3.5 oz of green beans
3.5 oz of red pepper
14 oz of coconut milk
Sunflower oil and salt
Mince the onion and red pepper. Chop the green beans and dice the eggplant grate the ginger.
Heat the oil in an earthenware pot. Fry the onion with the ginger. Make incisions to the fish. Add the fish and vegetables, when the vegetables are halfway done add the coconut milk. Cover and simmer for 20 minutes.
Past this time turn the fish and simmer for another 20 min.
