2 and a half pounds of mochi rice
1 can of coconut milk
1 package (1 pound) of brown sugar
Wash the rice and cook it in a pot. In a saucepan, combine the coconut milk and 1 1/4 cups of brown sugar. Cook over medium flame, stirring constantly, until it thickens for about 20 minutes.
With the banana leaves over low flame in the electric stove line a baking tray. Preheat the oven to 350Â° f.
Place the cooked rice in a large bowl. Reserve 1/2 cup of the coconut milk, stir and spread the rest of the brown sugar evenly on the hot rice.
Place the preparation in a mold. Cover with 1/2 cup of the reserved coconut milk. Bake for 20 minutes, then grilled fir 5 minutes. Chop in small pieces.
It will yield 4 – 5 servings.
